Sausage & Peppers is an Italian-American dish that was first served in 1926 at the Feast of San Gennaro in New York. I’ve adapted the dish to cook-up in the air fryer in 20 minutes or less and introduced a simple balsamic glaze.
The Silicone Kitchen Air Fryer Liner does more than just protect the inside of the air fryer basket – it’s a cooking vessel too. The residual heat of the liner helps the balsamic vinegar create a thin glaze when it comes into contact with the ingredients inside.
The Silicone Kitchen Baking Cups do double duty here, acting as both mise-en-place prep bowls and de facto measuring cups. Each large round baking cup holds approximately 3/4 cup, each regular size holds 1/4 cup, each mini cup holds 1 tablespoon, so you can eyeball quantities and make sure all ingredients are accounted for and in order.

Ingredients
1 package Italian style fully-cooked sausage links (4 sausages), cut into ¼-inch rounds, (about 1½ cups), such as Amylu Roasted Garlic Asiago Chicken Sausage
1/4 inch thick slices
1½ cup cubed, red, yellow or orange bell peppers about 2 cups sliced sausage
¼ cup chopped shallot, about 1 medium shallot
1 tablespoon Mediterranean oregano
½ teaspoon garlic powder
¼ teaspoon crushed red peppers
2 tablespoons balsamic vinegar, plus more for serving
Flaky sea salt, for serving
Crusty bread for serving, optional
Makes 2 to 4 servings.
Instructions
Preheat the air fryer to 400°. Place the sausages, peppers, shallot, oregano, garlic powder and crushed red pepper flakes in the The Silicone Kitchen Air Fryer Liner and using a The Silicone Kitchen Spatula stir until well combined.
Place the liner in the air fryer and cook for 18-20 minutes stirring frequently to ensure that the sausages and peppers are evenly cooked. The sausage and peppers should be well browned and starting to char around the edges.
Carefully remove the liner from the air fryer and place it in a heat-safe location. Using a The Silicone Kitchen Spatula, immediately toss with the balsamic vinegar to coat. Transfer to a serving plate. Serve with crusty bread, flaky sea salt, and additional balsamic vinegar for drizzling.
