Recipe: Mini Peanut Butter Cup Cookies

This is one of my all-time favorite recipes for mini baking cups. The mini peanut butter cup cookies are easy to make, absolutely delicious, and great for sharing. Even when you have little "helpers" in the kitchen, like I typically do, and they don't turn out perfectly shaped, they are still such a hit.

Ingredients

Makes approximately 40 cookies
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1/2 cup granulated white sugar
  • 1/2 cup peanut butter
  • 1/2 cup brown sugar, packed
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 40 mini Reese's peanut butter cups, unwrapped

Instructions

  1. Preheat oven to 375°F and prepare a baking sheet with silicone baking mats and mini silicone baking cups
  2. In a medium bowl, sift together flour, salt, and baking soda
  3. In a separate bowl, cream together butter, peanut butter, and brown sugar until fluffy. 
  4. Add eggs, vanilla and milk until combined 
  5. Gradually add the flour mixture until combined
  6. Divide into 40 balls and place each in a mini silicone baking cup
  7. Bake for about 8 minutes
  8. Remove from oven and immediately place a mini peanut butter cup into each ball. Let cool completely, then remove and enjoy!
